Seattle has this amazing local chain called Katsu burger. They make these really delicious fried cutlet burgers, they’ve got beef, chicken pork, they’re all amazing. If you come up here, you have to try them, if you can’t make it though, here’s my take on them. I used this recipe a few years ago to win my family’s Christmas burger competition, it’s killer.

Katsu Burger - Per burger
4oz ground beef - 80/20
1 egg
AP flour
Panko breadcrumbs
1 burger bun - toasted
Thinly sliced cabbage
Tomato slices
Red onion
Pickles
Japanese Mayo
Tonkatsu Sauce - makes enough for at least 4 burgers
60g or 3 tbsp ketchup
20g or 1 tbsp oyster sauce
20g or 1 tbsp worchestershire sauce
5g or 1/2 tbsp sugar
10g or 1/2 tbsp rice vinegar
Step 1: Form Patties
Gather and prep any ingredients, toppings, and sauces you'd like on your burger. Form the ground beef into sturdy patties that can fit between the buns. These need to be well formed so they don't fall apart when frying.
Step 2: Bread and Fry
In a pot for frying, add enough oil to shallow fry the patties. This means the oil should reach halfway up each burger. You will bread the patties immediately before frying them, so bring the oil up to 350f. Add flour to one bowl, the egg to a second one, and panko to a third bowl. Beat the egg so it's fully mixed. Season both sides of the burgers with salt, and then coat them in the flour. Take them from the flour to the egg, and make sure they're coated. Lastly, coat them in panko and then gently place the burger in the oil.
Set a 4 minute timer, and gently move the pan around while the burger fries on the first side. When there's 2 minutes left on the timer, flip the patty and let it brown on the other side. 4 minutes is the correct time for this burger to be perfectly cooked with a slight bit of pink. Remove the katsu patty from the pan and let it cool gently before building the sandwich. Season this with salt while it cools.
Step 3: Build the Burger
Add Japanese mayo to the bottom bun, add pickles, tomato slices, and red onion. Place the katsu patty on top of that, and add the tonkatsu sauce directly to the patty. Add a pile of shredded cabbage to the top and cover it with the top bun. This is easily my favorite burger just for how juicy the patty is alone. Add all the toppings and it's one of the all time greats.
