Chicago Dogs From The Bear

The Bear is consistently the most true to life representation of the service industry on TV. They nail the fast paced nature of it so well, even if things are slightly dramatized. To me, it’s obvious that the team behind the show knew what they were doing. To support this, the food they show off is not only amazing looking, it’s also pretty well thought out and involves a lot of onscreen talent knowing how to cook. How does it taste though? Here's how to make the Chicago Dogs they bring to the kid's birthday party in the first season!



Chicago dogs

Poppy seed bun (regular bun, butter and poppy seeds)

All beef cased hot dog

Yellow mustard

Diced white onion

Picked sport peppers

Celery salt

Neon relish (sweet relish mixed with food coloring)

Sliced tomato

Dill pickle spear


For the dog itself, boil a case on dog until it’s warmed through, like 5 minutes or so. The casing is important for the snap that everybody loves in a good dog. If you can get poppy seed buns at the store, that's great, but I had a hard time finding them. To approximate the bun, simply brush melted butter on the outside and roll it in poppy seeds then bake it so they stick. 350f for a few minutes is good. For the bright neon relish, simply mix a few tablespoons of relish with one drop of green food coloring. It seems ridiculous, but this is how it's done in Chicago.


For building, place your dog into the bun and hit it with a squirt of yellow mustard. Diced white onions go on top of that. Then the tomato slices along with a couple of hot pickled peppers (I couldn’t find sport peppers anywhere in Seattle, so I had to use standard hot peppers). Celery salt on top of that. The neon relish goes on and then an entire pickle spear. The saltiness of the hotdog is balanced by the tangy, fresh and sweet condiments. This is way better than it sounds. If you're in need of a new hot dog fix, this is the one to try.
